Owner/chef Yoon Jae Kim combines more than 25 years of experience and he decided to opened Kansaku Sushi restaurant in the heart of downtown in Evanston on November 13, 2006. His adventure continues to grow in Buffalo Grove area and opened Vin90 restaurant in Arboretum golf course club house(2022) and Sushi Mura in Chicago(2023).  Vin90 restaurant serves golfers and also the neighborhood with American and Japanese cuisine together.  However, the atmosphere was not quite adequate for Japanese cuisine restaurant.  So he decided to open virtual restaurant, Otaru Sushi Chicago, to serve more focused on Japanese cuisine to the community.

Cultural influences and a culinary passion have motivated them to pursue a career as a sushi chef. Especially, signature rolls and chef signature nigiris are bound to please any crowd. Our chefs personally order the fish from overseas to deliver the freshest and tastiest for our customers. We deliver our best through our expert knowledge of sushi and by making it our personal goal to create satisfactory dishes for each of his customers.
